做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
