做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
