做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待油(yóu )六(liù )成热(rè )下鱼,煎(jiān )至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他(tā )材(cái )料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
