做法:春(chūn )笋切成片后加少许盐(yán )捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火(huǒ )。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍(shāo )收汁(zhī )时(shí )盖上锅盖焖(mèn )。
