做法:春(chūn )笋切成片后加少(shǎo )许盐(yán )捞(lāo )出(chū )后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
