做法:春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
