做法:春笋切成(chéng )片后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时候(hòu )加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
