做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
