做法(fǎ ):春笋(sǔn )切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁(zhī )时盖(gài )上锅盖焖。
