做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
