做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖(mèn )。
