做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时(shí )盖上锅盖焖。
