做(zuò )法:春笋切(qiē )成(chéng )片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上(shàng )锅盖焖。
