做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软,拍(pāi )裂一小块(kuài )姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油(yóu ),待油(yóu )六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
