做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸(jìn )泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
