做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在(zài )锅上擦一遍,放(fàng )两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时,下(xià )盐调味即(jí )可品尝。
