做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小(xiǎo )块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅(guō )上擦一遍,放两勺油(yóu ),待(dài )油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝(cháng )。
