做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水(shuǐ )把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍(biàn ),放两勺油,待油六成(chéng )热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。
