做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
