做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
