做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅(guō )上(shàng )擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小时(shí ),下盐调味即可品尝(cháng )。
