做法:洗净(jìng )宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小火(huǒ )煲一(yī )个(gè )半(bàn )小时,下盐调味即可品尝。
