做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水(shuǐ )快熬干(gàn )的(de )时(shí )候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
