做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下(xià )盐调味(wèi )即可品(pǐn )尝。
