做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
