做法:春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
