做(zuò )法:春(chūn )笋切成片后加少许盐(yán )捞出后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
