做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜块(kuài )在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮(zhǔ )好(hǎo )的(de )鲫鱼(yú )和其(qí )他材料(liào ),武火煮沸,转中小火煲一个半小时,下(xià )盐调味即可品尝。
