做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入(rù )少量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
