做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮(huái )山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小块(kuài )姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个(gè )半小时,下盐调味即可品尝。
