做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入(rù )煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时,下盐调味即(jí )可品尝。
