做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的(de )鲫鱼和其(qí )他(tā )材(cái )料,武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小(xiǎo )时,下盐(yán )调味即可品尝。
