做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生(shēng )姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮到水快(kuài )熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
