做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把陈皮(pí )泡软(ruǎn ),拍裂(liè )一小块姜(jiāng ),热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转中小火(huǒ )煲一个半小时,下盐(yán )调(diào )味即可品尝。
