做法:春笋(sǔn )切成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
