做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快(kuài )熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
