做法:春笋切(qiē )成片后加少许盐(yán )捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。
