做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮(zhǔ )沸,转中小火(huǒ )煲一个半(bàn )小时,下盐调味即可品尝。
