做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
