做法:洗(xǐ )净(jìng )宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用(yòng )清水把陈皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六(liù )成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火(huǒ )煲一个半小时,下盐调味即可品尝。
