做法:洗净宰好鲫(jì )鱼(yú ),洗(xǐ )净(jìng )淮山和薏米。用(yòng )清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在(zài )锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个半小(xiǎo )时(shí ),下盐调味即可品尝。
