做法(fǎ ):春笋切成片(piàn )后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖(gài )焖。
