做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时(shí )候加入盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
