做(zuò )法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅(guō )上擦一(yī )遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个(gè )半小时,下(xià )盐(yán )调味即可品尝。
