做法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水(shuǐ )把陈皮(pí )泡(pào )软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调味即可品(pǐn )尝(cháng )。
