做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜块在锅上擦一(yī )遍(biàn ),放两勺油,待(dài )油六成热(rè )下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲(bāo )里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味即可品尝。
