做法:洗净宰好鲫鱼,洗净淮(huái )山(shān )和薏米。用清水把(bǎ )陈皮泡(pào )软,拍裂(liè )一小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六(liù )成(chéng )热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转(zhuǎn )中小火(huǒ )煲一个半(bàn )小时,下盐调味即可品尝。
