做(zuò )法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
