做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米(mǐ )。用(yòng )清水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜,热锅(guō ),用(yòng )姜(jiāng )块在(zài )锅上擦一遍,放两勺油(yóu ),待(dài )油六(liù )成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸(fèi ),转中小火煲(bāo )一个半小时,下盐调味即可品尝。
