做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一(yī )小块姜,热(rè )锅,用(yòng )姜块在(zài )锅(guō )上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎(jiān )煮好的鲫鱼(yú )和其他材(cái )料,武火(huǒ )煮沸,转中小火煲一个半小时,下盐调味即可品尝。
